A good, fresh Mango coulis recipe that isn’t too sweet. Serve with desserts, e.g. with a plain Vanilla Cheesecake, or layer with champagne/cava/prosecco for a fruity cocktail!

Recipe:
2 ripe mangoes
splash water
2 tbsp icing sugar
1 lemon

Method:
1. Cut the mango up into small chunks.
2. Place in a saucepan, add a splash of water, and heat over medium heat until soft throughout.
3. Place in a blender, add the icing sugar and the juice from 1 lemon
