It’s always fun to make vegetables interesting. This little ragout is a tasty, summery side that compliments meat or fish wonderfully.

Recipe

Ingredients (serves 4 as a side):

2 large white onions, sliced
3 cloves garlic
2 courgettes, sliced in half and then cut into 5mm pieces
2 handfuls of peas, frozen are fine
Juice of 1/2 lemon (or more, according to taste and the juicyness of the lemon!)
salt and pepper
knob of butter
vegetable oil

Method:

1. Heat a frying pan with the butter and a glug of oil in. The butter gives that yummy rich, buttery taste, but butter alone burns at a low temperature and so add oil to get both the heat needed and the flavour.
2. Saute the onion for approximately 6 minutes on medium heat until softened and until they are starting to turn slightly caramel. Add the garlic and fry for a further 2 minutes.
3. Add the courgettes and fry for another 5 minutes until soft and cooked. Add in the peas and cook for another 2 minutes, but no longer or they will get mushy.
4. Take off the heat and squeeze in the juice of 1/2 a lemon, or more if needed. Season with salt and pepper and serve.
